Shinnecock Flounder Fillets Epicure Recipe - Cooking Index

1/2 lb | 227g / 8oz | Firm white mushrooms |
1/2 cup | 73g / 2.6oz | Chopped chives |
2 tablespoons | 30ml | Lemon juice |
1 cup | 237ml | Light cream |
1/8 teaspoon | 0.6ml | Nutmeg |
1 | Cayenne pepper | |
3 tablespoons | 45ml | Butter |
Paprika - to taste | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Arrange fillets in a buttered baking dish, cover with sliced mushrooms. Sprinkle with lemon juice and chives. Season cream with salt, pepper, nutmeg and cayenne.
Pour cream over fish and bake at 350 degrees for 15 minutes. Remove from oven, sprinkle with paprika and brown quickly under the broiler.
