Seaside Poached Bluefish Recipe - Cooking Index
2 lbs | 908g / 32oz | Bluefish (or other fish) fillets |
1 lb | 454g / 16oz | Onion - sliced (medium) |
2 | Celery stalks, including tops - cut in strips | |
2 | Carrots - cut in strips | |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
2 teaspoons | 10ml | Salt |
Water - to barely cover |
Put bluefish in single layer in wide shallow pan (such as large fry pan); add vegetables and seasonings. Add water to just barely cover the fish.
Bring to a boil, cover and simmer slowly until fish flakes easily when tested with a fork, approximately 5 to 10 minutes. Be careful not to overcook.
This recipe yields 6 servings.
