Seaside Poached Bluefish

Recipe Ingredients

2 lbs 908g / 32ozBluefish (or other fish) fillets
1 lb 454g / 16ozOnion - sliced (medium)
2   Celery stalks, including tops - cut in strips
2   Carrots - cut in strips
1/4 teaspoon 1.3mlFreshly-ground black pepper
2 teaspoons 10mlSalt
  Water - to barely cover

Recipe Instructions

Put bluefish in single layer in wide shallow pan (such as large fry pan); add vegetables and seasonings. Add water to just barely cover the fish.

Bring to a boil, cover and simmer slowly until fish flakes easily when tested with a fork, approximately 5 to 10 minutes. Be careful not to overcook.

This recipe yields 6 servings.
