1 lb | 454g / 16oz | Cod fillets |
Fresh parsley - for garnish | ||
1 | Lemon - peeled and sliced | |
Poaching Liquid | ||
4 | Water - combined with | |
1 | Milk - to make enough | |
To cover fish in a medium pan |
Combine water, milk, and lemon, and heat until simmering. Add cod. Adjust liquid to cover fish. Simmer gently but do not allow to boil for 10 minutes for each 1-inch of thickness of the cod fillets. Remove from liquid and garnish with parsley.
This recipe yields 4 servings.
