Poached Cod

Recipe Ingredients

1 lb 454g / 16ozCod fillets
  Fresh parsley - for garnish
1   Lemon - peeled and sliced
  Poaching Liquid
4   Water - combined with
1   Milk - to make enough
  To cover fish in a medium pan

Recipe Instructions

Combine water, milk, and lemon, and heat until simmering. Add cod. Adjust liquid to cover fish. Simmer gently but do not allow to boil for 10 minutes for each 1-inch of thickness of the cod fillets. Remove from liquid and garnish with parsley.

This recipe yields 4 servings.
