Oven Fried Scup

Recipe Ingredients

2 lbs 908g / 32ozScup or porgies - whole, dressed
  Salt - to taste
  Freshly-ground black pepper - to taste
1   Egg
1/4 cup 49g / 1.7ozButter or margarine - melted
  Flour - for dredging
  Paprika - to taste

Recipe Instructions

Sprinkle fish lightly with salt and pepper. Dip each fish in egg and roll in flour. Place fish in a single layer in a well-greased baking dish. Pour melted butter or margarine over fish and sprinkle with paprika.

Bake at 500 degrees for 15 to 20 minutes or until fish flakes off bone easily with a fork.

This recipe yields 4 servings.
