Heavenly Broiled Mackerel Recipe - Cooking Index
2 lbs | 908g / 32oz | Spanish or other mackerel fillets |
2 tablespoons | 30ml | Lemon juice |
1/2 cup | 73g / 2.6oz | Grated parmesan cheese |
1/4 cup | 49g / 1.7oz | Butter or margarine - softened |
3 tablespoons | 45ml | Mayonnaise or salad dressing |
3 tablespoons | 45ml | Chopped green onions |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Hot pepper sauce |
Place fillets in a well-oiled or greased bake-and-serve dish. Brush fillets with lemon juice and let stand for 10 minutes.
Combine parmesan cheese, butter, mayonnaise, onions, salt and hot pepper sauce. Mix well and set aside.
Broil fillets about 4 inches from heat source for 6 to 8 minutes. Remove from heat and spread cheese mixture over the fillets. Broil for 2 to 3 minutes longer until lightly browned. Serve immediately.
