Hake Fillet Tomato Basil Recipe - Cooking Index
4 | Whiting or red hake fillets - (6 to 8 oz ea) | |
6 | Tomatoes - diced (medium) | |
8 | Fresh basil leaves - (to 10) - chopped | |
4 | Garlic cloves - minced | |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Oregano |
2 tablespoons | 30ml | Olive oil |
Crushed red pepper - to taste |
Heat olive oil. Saute minced garlic in oil until the garlic softens. Add tomatoes, basil, salt, pepper, oregano, and red pepper. Simmer for 5 to 7 minutes.
Preheat oven to 350 degrees.
Rinse hake fillets in cold water and pat dry. Arrange fillets in baking dish and pour tomato basil sauce over the fish. Bake until fish flakes easily, approximately 15 to 20 minutes.
