Cape Shark In Tomato And Citrus

Recipe Ingredients

1 lb 454g / 16ozCape shark (dogfish) - cut into 4 pieces
1 teaspoon 5mlSalt
1/4 cup 59mlOlive oil
3   Garlic cloves - crushed
8 sections  Coriander
6 tablespoons 90mlPureed tomato
2 tablespoons 30mlFresh citrus (lemon or lime) juice
1 teaspoon 5mlDried red chili peppers
1/3 cup 78mlWater

Recipe Instructions

Rub salt well onto fish pieces. Use a small amount of oil to coat a shallow baking dish and place fish in baking dish. Heat the remaining oil in a skillet and gently fry the garlic. Add the coriander, followed in a few minutes by the pureed tomato and citrus juice. Stir to mix ingredients together.

Pour tomato-citrus sauce over the fish. Sprinkle the chili peppers over the fish and add water to the baking dish. Bake in an oven preheated to 425 degrees for 20 to 25 minutes.
