Cape Shark In Tomato And Citrus Recipe - Cooking Index
1 lb | 454g / 16oz | Cape shark (dogfish) - cut into 4 pieces |
1 teaspoon | 5ml | Salt |
1/4 cup | 59ml | Olive oil |
3 | Garlic cloves - crushed | |
8 sections | Coriander | |
6 tablespoons | 90ml | Pureed tomato |
2 tablespoons | 30ml | Fresh citrus (lemon or lime) juice |
1 teaspoon | 5ml | Dried red chili peppers |
1/3 cup | 78ml | Water |
Rub salt well onto fish pieces. Use a small amount of oil to coat a shallow baking dish and place fish in baking dish. Heat the remaining oil in a skillet and gently fry the garlic. Add the coriander, followed in a few minutes by the pureed tomato and citrus juice. Stir to mix ingredients together.
Pour tomato-citrus sauce over the fish. Sprinkle the chili peppers over the fish and add water to the baking dish. Bake in an oven preheated to 425 degrees for 20 to 25 minutes.
