Baked Whiting Shinnecock

Recipe Ingredients

2 lbs 908g / 32ozWhiting fillets
1/3 cup 78mlSliced mushrooms
2 cups 292g / 10ozScallions - chopped (large)
1 teaspoon 5mlSalt - or to taste
1/2 teaspoon 2.5mlFreshly-ground black pepper
2 tablespoons 30mlDry white wine
2 teaspoons 10mlLemon juice
1/4 cup 36g / 1.3ozGrated Cheddar cheese
1/4 cup 36g / 1.3ozBread crumbs
2 tablespoons 30mlLite margarine - melted

Recipe Instructions

Prepare a baking dish with non-fat cooking spray, or a light coating of margarine. The dish should be large enough to hold whiting fillets in one layer. Sprinkle mushrooms and scallions over the bottom of the dish.

Season the fish with salt and pepper and sprinkle wine and lemon juice over all. Top with grated cheese and sprinkle with bread crumbs. Pour melted margarine evenly over the topping.

Cover and bake at 400 degrees for 7 minutes. Uncover and bake another 5 minutes, or until topping is golden brown.
