Baked Whiting Shinnecock Recipe - Cooking Index
2 lbs | 908g / 32oz | Whiting fillets |
1/3 cup | 78ml | Sliced mushrooms |
2 cups | 292g / 10oz | Scallions - chopped (large) |
1 teaspoon | 5ml | Salt - or to taste |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
2 tablespoons | 30ml | Dry white wine |
2 teaspoons | 10ml | Lemon juice |
1/4 cup | 36g / 1.3oz | Grated Cheddar cheese |
1/4 cup | 36g / 1.3oz | Bread crumbs |
2 tablespoons | 30ml | Lite margarine - melted |
Prepare a baking dish with non-fat cooking spray, or a light coating of margarine. The dish should be large enough to hold whiting fillets in one layer. Sprinkle mushrooms and scallions over the bottom of the dish.
Season the fish with salt and pepper and sprinkle wine and lemon juice over all. Top with grated cheese and sprinkle with bread crumbs. Pour melted margarine evenly over the topping.
Cover and bake at 400 degrees for 7 minutes. Uncover and bake another 5 minutes, or until topping is golden brown.
