Ybor City Fillet

Recipe Ingredients

1 1/2 lbs 681g / 24ozTilefish fillets
1 1/2 cups 219g / 7.7ozDiced yellow bell pepper
1 1/2 cups 219g / 7.7ozDiced green bell pepper
2 cups 320g / 11ozCooked yellow rice
1 tablespoon 15mlPaprika
2 teaspoons 10mlMinced garlic
1 teaspoon 5mlFreshly-ground black pepper
1 teaspoon 5mlSalt
1 teaspoon 5mlGround cumin

Recipe Instructions

Cut fish into approximately 2- by 2-inch pieces. Mix bell peppers with cooked rice; set aside and keep warm.

In mixing bowl combine paprika, garlic, pepper, salt, cumin and fish. Mix ingredients until fish is coated well. Place fish on a lightly oiled broiler pan and broil 4 to 6 inches from heat for 5 to 6 minutes on each side.

Fish is done when it flakes easily when tested with a fork and is opaque in the center. Serve immediately with yellow rice.

This recipe yields 4 servings.
