Steamed Alaska Pollock Gardiniere Recipe - Cooking Index
| 3 cups | 711ml | Diagonally sliced Swiss chard or spinach |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 4 | Pollock fillets - (3 to 5 oz ea) - thawed if necessary | |
| 2 teaspoons | 10ml | Lemon or lime juice |
| 4 | Lemon slices | |
| 4 | Tomato slices | |
| 1 teaspoon | 5ml | Minced fresh basil |
| (or 1/4 tspn dried | ||
| Basil/ crushed) |
Place Swiss chard on heatproof dish or directly on steamer rack over boiling water; season chard with salt and pepper. Arrange pollock on chard, sprinkle with lemon juice, salt and pepper.
Place a lemon slice and tomato slice on each portion; sprinkle with basil. Return water to boil; steam about 10 minutes or until chard is tender and fish flakes when tested with a fork.
This recipe yields 4 servings.
