Salmon Creole

Recipe Ingredients

1   Salmon - (16 oz) - undrained
1   Egg
1   Onion - finely diced (medium)
1   Green pepper - finely diced (large)
2 cups 125g / 4.4ozCooked tomatoes
1 1/2 cups 219g / 7.7ozBread crumbs
3 tablespoons 45mlButter
1 tablespoon 15mlParsley
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlFreshly-ground black pepper
1 teaspoon 5mlChili powder
2 cups 292g / 10ozShredded sharp Cheddar cheese - (optional)

Recipe Instructions

Mix salmon and egg. Add finely diced onion and green pepper, tomatoes, butter, 1/2 cup bread crumbs, parsley, salt, pepper, and chili powder. Simmer slowly in sauce pan 10 to 15 minutes.

Turn into buttered casserole or individual dishes. Cover with remaining bread crumbs and bake in a moderate oven, 375 degrees, until crumbs are brown. Top with cheese.

This recipe yields 4 servings.
