Poor Man's Halibut Thermidor Recipe - Cooking Index
2 tablespoons | 30ml | Chopped onions |
1/2 cup | 118ml | Sliced mushrooms |
2 tablespoons | 30ml | Butter |
2 tablespoons | 30ml | Flour |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1/8 teaspoon | 0.6ml | Paprika |
1/2 cup | 118ml | Milk |
1/2 cup | 31g / 1.1oz | Chicken bouillon |
1/2 teaspoon | 2.5ml | Worchestershire sauce |
1 | Egg yolk | |
1 tablespoon | 15ml | Sherry |
3 cups | 711ml | Cooked halibut |
Parmesan cheese - as needed | ||
Bread crumbs - as needed | ||

Fresh parsley - for garnish |
Saute onions and mushrooms in butter. Add flour, pepper and paprika and blend. Remove from heat, add milk, broth and Worcestershire sauce. Boil for 1 minute.
Add egg yolk slowly, then sherry. Mix in the halibut and pour into 6 individual dishes and sprinkle with parmesan cheese and bread crumbs, and a dash of paprika.
Bake at 450 degrees for 5 to 10 minutes, or until heated through. Garnish with fresh parsley.
This recipe yields 6 servings.
