Poor Man's Halibut Thermidor

Recipe Ingredients

2 tablespoons 30mlChopped onions
1/2 cup 118mlSliced mushrooms
2 tablespoons 30mlButter
2 tablespoons 30mlFlour
1/8 teaspoon 0.6mlFreshly-ground black pepper
1/8 teaspoon 0.6mlPaprika
1/2 cup 118mlMilk
1/2 cup 31g / 1.1ozChicken bouillon
1/2 teaspoon 2.5mlWorchestershire sauce
1   Egg yolk
1 tablespoon 15mlSherry
3 cups 711mlCooked halibut
  Parmesan cheese - as needed
  Bread crumbs - as needed
1   Paprika
  Fresh parsley - for garnish

Recipe Instructions

Saute onions and mushrooms in butter. Add flour, pepper and paprika and blend. Remove from heat, add milk, broth and Worcestershire sauce. Boil for 1 minute.

Add egg yolk slowly, then sherry. Mix in the halibut and pour into 6 individual dishes and sprinkle with parmesan cheese and bread crumbs, and a dash of paprika.

Bake at 450 degrees for 5 to 10 minutes, or until heated through. Garnish with fresh parsley.

This recipe yields 6 servings.
