Creole Halibut Bits Recipe - Cooking Index
Margarine - to grease dish | ||
1 1/2 lbs | 681g / 24oz | Halibut - (to 2 lbs) - cut 1" squares |
Creole Sauce | ||
1/2 cup | 31g / 1.1oz | Chopped onion |
1 | Garlic clove - minced | |
3 tablespoons | 45ml | Cooking oil |
1/2 cup | 73g / 2.6oz | Chopped green pepper |
1 | Bay leaf | |
1 | Whole tomatoes - (16 oz) - cut bite size | |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
Tabasco sauce - to taste |
Lightly grease a 8- by 9-inch baking dish with margarine. Place cubed halibut in baking dish, cover and bake in a 350 degree oven for 20 minutes, or until fish flakes easily with a fork.
While fish is baking, prepare the Creole sauce. Cook chopped onion minced garlic in cooking oil until yellowed. Add green pepper, bay leaf, tomatoes, salt, and pepper. Simmer uncovered for 20 minutes. May add tabasco, as desired.
When fish is done, drain off excess liquid. Pour Creole sauce over halibut and serve hot.
This recipe yields 4 to 6 servings.
