Alaska Pollock Caribbean-Style Recipe - Cooking Index
1/4 cup | 15g / 0.5oz | Thinly-sliced onion |
1/4 cup | 59ml | Thinly-sliced green pepper |
1 | Garlic clove - minced | |
2 tablespoons | 30ml | Butter or margarine |
1 lb | 454g / 16oz | Pollock fillets - thawed if necessary |
1/8 teaspoon | 0.6ml | Salt |
1 pinch | Freshly-ground black pepper | |
1 can | Stewed tomatoes - (8 oz) | |
2 tablespoons | 30ml | Lime juice |
Saute onion, green pepper and garlic in butter; remove from skillet and set aside.
Place pollock in skillet; season with salt and pepper. Spoon tomatoes and sauteed vegetables over fillets. Sprinkle with lime juice.
Bring to a boil; simmer, covered, 5 minutes or until fish flakes easily when tested with a fork.
