Herb Crusted Salmon Fillet Recipe - Cooking Index
Chopped fresh herbs enhance fresh salmon fillet with flavor and color. If fresh parsley is all you can find, it'll be delicious too; you can add a pinch or two of dried herbs if you like.

1 tablespoon | 15ml | Freshly-grated lime zest |

Freshly-ground black pepper - to taste |
Rinse the salmon fillet in cold water and pat dry with paper towels. Preheat the oven to 375 degrees.
In a small bowl, combine the chopped parsley, herbs, lime zest, salt and pepper. Sprinkle the herb mixture evenly over the flesh side of the fish, pressing the mixture slightly so it clings to the fish.
Brush a large piece of foil lightly with melted butter or oil. Lay the salmon fillet on the foil and wrap it securely so that moisture doesn't escape during cooking.
Lay the salmon package on a shallow baking pan and bake in the heated oven until the salmon is just opaque through the thickest portion (cut with the tip of a knife to test), 15 to 20 minutes.
Open the foil package carefully to allow steam to escape, then transfer the fillet to a platter for serving.
