Alaska Snow Crab Pasta Parmesan Recipe - Cooking Index
3 1/2 lbs | 1589g / 56oz | Alaska snow crab clusters - thawed if necessary |
8 oz | 227g | Dried fettuccine |
3 tablespoons | 45ml | Melted butter |
1/2 cup | 73g / 2.6oz | Part-skim ricotta cheese |
1/4 cup | 36g / 1.3oz | Grated Parmesan cheese |
1 cup | 237ml | Cooked peas |
1 cup | 62g / 2.2oz | Diced tomatoes |
2 tablespoons | 30ml | Lemon juice |
2 teaspoons | 10ml | Dried basil |
1 | Garlic clove - pressed |
Reserve 4 snow crab clusters to garnish plates. Remove crabmeat from remaining crab clusters. Cook pasta according to package directions.
While pasta is cooking, place crabmeat on microwave-safe plate. Cover with vented plastic wrap and microwave on High power for 2 minutes, until hot.
Drain pasta and toss with butter, ricotta and Parmesan. Toss with crabmeat and remaining ingredients except snow crab clusters. Season to taste with salt and pepper.
Steam remaining crab clusters 4 to 5 minutes and serve alongside pasta.
