Oven Fried Chicken Breast Recipe - Cooking Index

1/2 cup | 73g / 2.6oz | Freshly-grated Parmesan cheese |
1 tablespoon | 15ml | Chopped fresh sage leaves |

Freshly-ground black pepper - to taste | ||
1 1/2 cups | 297g / 10oz | Unsalted butter - (1 stick) |
4 tablespoons | 60ml | Dijon mustard |
4 | Boneless skinless chicken breast halves - (1 1/2 lbs total) |
Preheat oven to 450 degrees and line a baking sheet with foil.
Tear bread into pieces and in a food processor pulse until finely ground. In a large bowl stir together 2 cups breadcrumbs, Parmesan, sage, and salt pepper to taste.
Melt butter, add salt and pepper to taste. Pat chicken dry and brush all over with mustard. Roll chicken in breadcrumb mixture, pressing gently to adhere, and arrange chicken, without crowding, on baking sheet. Drizzle with butter.
Bake chicken in middle of oven until cooked through and golden, 25 to 30 minutes.
