Recipe Ingredients

  Pizza Dough - (any generic pizza dough
  Recipe will suffice)
6 oz 170gCalzone Cheese - (see below)
4 oz 113gPepperoni - sliced into strips
4 oz 113gMild Italian rope sausage - cooked, and
  Sliced on the bias
4 oz 113gRoasted roma tomatoes - sliced in half
1/4 cup 59mlOlive oil
  Calzone Cheese Mixture
2 1/2 lbs 1135g / 40ozShredded Provolone cheese
2 1/2 lbs 1135g / 40ozShredded whole milk mozzarella cheese
1 cup 237mlDried parsley
2 tablespoons 30mlDried basil
2 cups 292g / 10ozGrated Locatelli Romano cheese
4   Garlic cloves - minced fine
1 cup 62g / 2.2ozMinced onions
3   Eggs

Recipe Instructions

Preheat oven to 400 degrees.

Place the dough on a floured pizza peel and spread. Place calzone cheese on dough, and then other ingredients on top of cheese and fold and seal calzone. Brush top of calzone with olive oil and bake in 400 degree oven for 15 minutes or until golden brown.

For the Calzone Cheese Mixture: Place cheese in bowl, add parsley, basil, Romano and mix well. In separate bowl, place garlic and onion and crack 3 eggs on top. Mix well and add to cheese mixture until well incorporated.
