1 lb | 454g / 16oz | Sliced 1/4"-thk cooked ham from deli - diced |
3 | Celery ribs from the heart - finely chopped | |
1/2 cup | 73g / 2.6oz | Salad olives with pimento - drained, chopped |
1 | Jalapeño pepper - seeded, and | |
Finely chopped | ||
4 | Scallions - finely chopped | |
1/4 cup | 10g / 0.4oz | Chopped flat-leaf parsley |
1/3 cup | 78ml | Mayonnaise - just enough to bind |
Salad | ||
3 tablespoons | 45ml | Prepared yellow mustard |
3 tablespoons | 45ml | Dill pickle relish |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Prepare bake-off biscuits to package directions, 8 to 10 minutes in the oven. Cool biscuits on wire rack.
Combine all remaining ingredients in a bowl and adjust seasonings, to taste.
Split cool biscuits and fill with Leslie's DEEELICIOUS ham salad.
This recipe yields 12 ham salad biscuits, 6 servings.
