Miss Leslie's Ham Salad On Biscuits

Recipe Ingredients

2   Tubes large bake-off biscuits - (6 pcs ea)
  = (Pillsbury brand recommended)
1 lb 454g / 16ozSliced 1/4"-thk cooked ham from deli - diced
3   Celery ribs from the heart - finely chopped
1/2 cup 73g / 2.6ozSalad olives with pimento - drained, chopped
1   Jalapeño pepper - seeded, and
  Finely chopped
4   Scallions - finely chopped
1/4 cup 10g / 0.4ozChopped flat-leaf parsley
1/3 cup 78mlMayonnaise - just enough to bind
  Salad
3 tablespoons 45mlPrepared yellow mustard
3 tablespoons 45mlDill pickle relish
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Prepare bake-off biscuits to package directions, 8 to 10 minutes in the oven. Cool biscuits on wire rack.

Combine all remaining ingredients in a bowl and adjust seasonings, to taste.

Split cool biscuits and fill with Leslie's DEEELICIOUS ham salad.

This recipe yields 12 ham salad biscuits, 6 servings.
