Uncle Louis's Chicken In The Pressure Cooker Recipe - Cooking Index
Uncle Louis was a chef in the service and his sister (93 years old) wrote the recipe out for me from memory. He always got raves and so did I when I made this for Christmas 1999!

Freshly-ground black pepper, to taste | ||
8 oz | 227g | Butter |
2 | Garlic cloves | |
3 lbs | 1362g / 48oz | Chicken - cut up |
2 tablespoons | 30ml | Kitchen Bouquet |
1 cup | 237ml | Cut up prunes |
1 cup | 160g / 5.6oz | Raisins |
2 cups | 474ml | Ginger ale or wine |
Optional Additions | ||
Carrots - cut up | ||
Potatoes - cut up |
In bottom of pressure cooker, brown garlic and butter. Combine flour, salt and pepper and lightly coat prepared chicken pieces. Brown the chicken pieces in butter and garlic. This may have to be done in several batches.
When chicken is browned, add all the chicken to cooker and add the remaining ingredients. Seal, and let the pressure build and jiggle for about 30 minutes. Cool immediately under cool running water.
This recipe yields 6 servings.
