Tangy Marinated Shrimp With Parsley Or Chives

Recipe Ingredients

4 tablespoons 60mlOlive oil
2 tablespoons 30mlWhite vinegar
1 teaspoon 5mlHouse Seasoning - (see recipe)
2/3 cup 157mlMayonnaise
2 tablespoons 30mlAnchovy paste
2 tablespoons 30mlCreole or brown mustard
1 lb 454g / 16ozLarge cooked shrimp - peeled, and
  Tails left on
1   Red bell pepper - sliced thin strips
4   Green onions - chopped
2 tablespoons 30mlChopped fresh parsley or chives
1   Lemon - juiced

Recipe Instructions

Using a large bowl, beat the oil, vinegar, and house seasonings together. Add the mayonnaise, anchovy paste, and mustard, and stir until well blended.

Fold in the shrimp, bell pepper, onion, parsley, and lemon juice. Place in refrigerator and marinate overnight.

Serve cold or at room temperature.

This recipe yields 6 servings.
