2 | Salted cod fish - (4" ea) - dry | |
2 lbs | 908g / 32oz | Yellow sweet potatoes - peeled, and |
Cut into 2" chunks | ||
2 | Green plantains - peeled and halved | |
6 | Green bananas - leave peel on |
Fill a large stock pot half way with cold water, and bring it to a boil. Add the salted codfish, and cook for 10 minutes. Then add the yams, plantains, and the bananas.
Bring all back to a hard boil, then reduce to a gentle boil until everything is tender, about 30 to 35 minutes. Hold in the water until ready to serve, peel the bananas before serving.
This recipe yields 10 servings.
