Mahimahi With Orange Salsa

Recipe Ingredients

1 cup 146g / 5.1ozDiced orange segments
1/8 cup 18g / 0.6ozFinely-diced red pepper
1/8 cup 18g / 0.6ozFinely-diced scallion
1/8 cup 7.8g / 0.3ozFinely-diced red onion
1/8 cup 2g / 0.1ozChopped cilantro
1/2 cup 118mlOrange juice
1 tablespoon 15mlMaple syrup
1 tablespoon 15mlLime juice
2 tablespoons 30mlOlive oil
  Salt - to taste
  Freshly-ground black pepper - to taste
4   Mahimahi fillets - (12 oz ea)

Recipe Instructions

Combine orange, red pepper, scallions, red onion, and cilantro. Add orange juice, syrup, lime juice, and olive oil. Season, to taste, with salt and pepper.

Grill the fish fillets for 4 minutes on each side and top with salsa.

This recipe yields 4 servings.
