Salmon With Smoked Bacon And Lentil Salad

Recipe Ingredients

1 1/2 lbs 681g / 24ozLentils
1/2 lb 227g / 8ozSmoked bacon
4 tablespoons 60mlChopped scallions
1 tablespoon 15mlChopped garlic
2 oz 56gWhole-grain mustard
4 oz 113gLemon juice
6 oz 170gOlive oil - plus
2 oz 56gOlive oil
4 tablespoons 60mlFlat-leaf parsley
  Salt - to taste
  Freshly-ground black pepper - to taste
6   Salmon - (8 oz ea)

Recipe Instructions

Boil lentils for 25 minutes in salted water until tender cool and set aside.

Saute bacon until crisp. Add scallions and garlic and saute until tender. Let cool then whisk in mustard, lemon juice and 6 ounces of olive oil. Fold dressing into lentils then add parsley, salt and pepper.

Saute salmon in 2 ounces of olive until golden on each side and place in a preheated 400 degree oven until desired doneness about 8 to 10 minutes. Serve salmon on top of lentils.

This recipe yields 6 servings.
