4 | Veal or lamb shanks | |
Well seasoned flour | ||
1 | Garlic - minced | |
3 tablespoons | 45ml | Olive oil |
1 cup | 237ml | Canned consomme |
1/4 cup | 59ml | Dry white wine |
2 tablespoons | 30ml | Tomato paste |
1 | Lemon - cut into strips , rind of | |
3 | Carrots - finely diced (small) | |
1 tablespoon | 15ml | Parsley - chopped |
1/4 teaspoon | 1.3ml | Dried marjoram - crushed |
1/4 teaspoon | 1.3ml | Dried oregano - crushed |
1/8 teaspoon | 0.6ml | Dried sage - crushed |
Roll shanks in flour; brown with garlic in hot oil in skillet. Add remaining ingredients to crockpot. Stir to mix. Add shanks.
Cover pot and cook on LOW for 10 to 12 hours until shanks are tender.
Garnish with parsley. Serve with pasta.
