Majestic Standing Rib Roast Recipe - Cooking Index
For a beautiful presentation, weave large rosemary sprigs between the ribs of the roast.

3 | Garlic cloves - (to 4) - thinly slivered | |
Coarse (kosher) salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Horseradish Cream - (see recipe) |
Preheat oven to 450 degrees. With the tip of a paring knife, make small slits all over the roast and insert the garlic slivers. Rub the roast with salt and pepper; place on a rack in a shallow pan. Roast for 25 minutes.
Reduce oven to 350 degrees and roast the meat until an instant-read thermometer registers 135 to 140 degrees for medium-rare, about 1 3/4 hours. Let the meat rest before carving. Serve with Horseradish Cream.
