Chicken Taco Party Recipe - Cooking Index
When you're in a pinch, simply pick up a cooked chicken at the grocery store.

4 cups | 250g / 8.8oz | Shredded cooked chicken |
2 tablespoons | 30ml | Fresh lemon juice |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Romaine - thinly sliced | |
Crosswise | ||
2 | Ripe tomatoes - cut into 1/4" dice | |
1 cup | 40g / 1.4oz | Slivered fresh basil leaves |
1/2 cup | 118ml | Ranch Dressing - (see recipe) |
1/2 cup | 118ml | Laurie's Guacamole - (see recipe) |
Place the taco shells in a basket. Combine chicken, lemon juice, salt and pepper in a bowl. Place remaining ingredients in separate bowls.
Arrange all so that guests can prepare their own tacos — filling them with chicken, lettuce, tomatoes and basil, then topping with a tablespoon each of dressing and guacamole.
This recipe yields 8 servings.
Per serving: 200 calories, 13g carbohydrate, 16g protein, 10g fat, 35mg cholesterol.
