Chicken Taco Party

When you're in a pinch, simply pick up a cooked chicken at the grocery store.

Recipe Ingredients

8   Taco shells
4 cups 250g / 8.8ozShredded cooked chicken
2 tablespoons 30mlFresh lemon juice
  Salt - to taste
  Freshly-ground black pepper - to taste
1   Romaine - thinly sliced
  Crosswise
2   Ripe tomatoes - cut into 1/4" dice
1 cup 40g / 1.4ozSlivered fresh basil leaves
1/2 cup 118mlRanch Dressing - (see recipe)
1/2 cup 118mlLaurie's Guacamole - (see recipe)

Recipe Instructions

Place the taco shells in a basket. Combine chicken, lemon juice, salt and pepper in a bowl. Place remaining ingredients in separate bowls.

Arrange all so that guests can prepare their own tacos — filling them with chicken, lettuce, tomatoes and basil, then topping with a tablespoon each of dressing and guacamole.

This recipe yields 8 servings.

Per serving: 200 calories, 13g carbohydrate, 16g protein, 10g fat, 35mg cholesterol.
