2 | Shallots - peeled, minced | |
3 | Garlic cloves - minced | |
1 lb | 454g / 16oz | Raw shrimp - peeled, deveined |
1 | Roma tomato - chopped | |
1 teaspoon | 5ml | Oregano |
4 oz | 113g | Feta cheese - crumbled |
2 tablespoons | 30ml | Parsley - chopped |
Heat oil in a large skillet, and add shallots and garlic. Saute until tender, about 3 minutes.
Add shrimp and saute for 2 minutes, just until shrimp turn pink. Add tomato and oregano and cook for 2 minutes more.
Remove from heat and place in serving bowl. Sprinkle with feta cheese and parsley.
This recipe yields 2 servings; 3 carb grams per serving.
