1 | Onion - chopped (small) | |
1 | Garlic clove - minced | |
1 tablespoon | 15ml | Cooking oil |
1 1/2 cups | 355ml | Tomato sauce |
1/3 cup | 78ml | Vinegar |
1/4 cup | 82g / 2.9oz | Sugar-free maple syrup |
1 tablespoon | 15ml | Bottled hot pepper sauce |
2 teaspoons | 10ml | Ground cayenne pepper |
1 teaspoon | 5ml | Chili powder |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Dry mustard |
In a large saucepan or dutch oven cook ribs, covered, in enough boiling salted water to cover for 45 to 60 minutes or until ribs are tender, drain well.
Sauce: In a medium saucepan cook onion, and garlic in hot cooking oil until the onion is tender but not brown. Stir in tomato sauce, vinegar, syrup, hot pepper sauce, cayenne pepper, chili powder, salt and dry mustard. Bring the mixture to boiling, reduce heat and simemr, uncovered for 25 minutes, stirring occasionally.
Gril ribs over slow coals for 45 minutes, turning every 5 minutes. Brush with sauce frequently. If desired, heat any remaining sauce and serve with the ribs.
