Pork Filettino

This dish -- an Olive Garden restaurant specialty -- is traditionally served with roasted potatoes. We've found it's superb served with "Zucchini Gratin" (see recipe).

Recipe Ingredients

4   Pork tenderloins - (8 to 10 oz ea)
8 tablespoons 120mlExtra-virgin olive oil
4 tablespoons 60mlMinced garlic
4 tablespoons 60mlChopped fresh rosemary
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
  Store-bought veal demi-glace - (optional)

Recipe Instructions

Sprinkle tenderloin with salt and pepper on all sides. Brush with olive oil, rosemary, garlic and parsley. Let marinate approximately two hours.

Cook on a hot grill until internal temperature reaches 165 degrees. Serve with veal demi-glace if desired.
