Turkey Meatloaf With Pesto And Spinach

Recipe Ingredients

1 lb 454g / 16ozGround turkey
1   Frozen spinach - (10 oz) - thawed
1/2 cup 73g / 2.6ozAtkins Bread Crumbs
1   Egg - beaten
3 tablespoons 45mlPrepared pesto
1/4 cup 59mlCream
1   Garlic clove - pressed
1 teaspoon 5mlDried oregano
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper

Recipe Instructions

Heat oven to 375 degrees. In a large bowl, combine turkey and spinach until well blended. Mix in remaining ingredients.

Transfer mixture to a loaf pan. Bake 45 to 50 minutes, until an instant read thermometer inserted in center registers 160 degrees. Cool 5 minutes before cutting into slices.
