Tequila Chicken

Recipe Ingredients

1/4 cup 59mlVegetable oil
1/4 cup 4g / 0.1ozFinely-chopped fresh cilantro
1 1/2 oz 42gTequila
1 1/2 tablespoons 22mlGround cumin
1 tablespoon 15mlChopped garlic
1 teaspoon 5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/8 teaspoon 0.6mlCayenne pepper
2 lbs 908g / 32ozBoneless skinless chicken breast halves
1/2   Butter

Recipe Instructions

Heat oven 400 degrees.

In a large bowl, combine oil, cilantro, tequila, cumin, garlic, salt, pepper and cayenne. Add chicken and toss to coat.

Transfer chicken to a baking sheet. Bake 12 to 14 minutes, or until largest piece is cooked through.

Remove from oven and top each breast with a small pat of butter and let melt.
