Tequila Chicken Recipe - Cooking Index
1/4 cup | 59ml | Vegetable oil |
1/4 cup | 4g / 0.1oz | Finely-chopped fresh cilantro |
1 1/2 oz | 42g | Tequila |
1 1/2 tablespoons | 22ml | Ground cumin |
1 tablespoon | 15ml | Chopped garlic |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/8 teaspoon | 0.6ml | Cayenne pepper |
2 lbs | 908g / 32oz | Boneless skinless chicken breast halves |
1/2 | Butter |
Heat oven 400 degrees.
In a large bowl, combine oil, cilantro, tequila, cumin, garlic, salt, pepper and cayenne. Add chicken and toss to coat.
Transfer chicken to a baking sheet. Bake 12 to 14 minutes, or until largest piece is cooked through.
Remove from oven and top each breast with a small pat of butter and let melt.
