Turkey Club With Watercress And Tomato

Recipe Ingredients

1/3 cup 78mlMayonnaise
2 tablespoons 30mlFinely-chopped fresh basil
  = (or 2 tspns dried basil)
8   Atkins white bread - lightly toasted
1 1/4 lbs 567g / 20ozSliced turkey breast
1 cup 40g / 1.4ozWatercress leaves
12   Bacon - cooked until crisp
2   Plum tomatoes - thinly sliced

Recipe Instructions

Mix mayonnaise with basil. Spread on bread slices.

Top 4 bread slices with a quarter of the turkey, a quarter of the watercress, three slices bacon and a quarter of the tomato slices. Top with remaining four slices bread. Cut each sandwich in half on the diagonal.
