Sausage And Peppers Over Penne Recipe - Cooking Index
Although this recipe calls for andouille sausage, which is relatively hot, any sausage may be substituted. If using uncooked sausage, prick it well all over, place it in a skillet with 1/4 cup of water and simmer 5 minutes, until cooked through.

1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
In a large skillet heat oil over medium-low heat. Add sausage and cook 5 minutes, until browned. With a slotted spoon, transfer sausage to a bowl.
Add onions to skillet; cook 5 minutes, until lightly golden. Add peppers and cook 12 minutes, or until tender. Meanwhile, cook pasta according to package directions. Drain and keep warm.
Add 1/2 cup water, salt, pepper and reserved sausage to skillet. Stir well; toss pepper mixture with pasta.
This recipe yields 4 servings.
