Mediterranean Swordfish Steaks Recipe - Cooking Index

2 tablespoons | 30ml | Fresh lemon juice |
1 teaspoon | 5ml | Dried oregano |
1/2 teaspoon | 2.5ml | Grated lemon rind |
1/2 teaspoon | 2.5ml | Crumbled dried rosemary |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1 1/2 lbs | 681g / 24oz | Swordfish steaks, abt 1" thick |
Mix olive oil, lemon juice, oregano, lemon rind, rosemary, salt and pepper in a resealable plastic bag. Add swordfish steaks; toss to coat. Marinate at room temperature 30 minutes, turning occasionally.
Prepare a medium grill. Cook steaks about 5 minutes per side for medium doneness.
