Green Peppercorn Dijon Tenderloin

5 lbs 2270g / 80ozBeef tenderloin - choice cut
1/2 cup 118mlDijon mustard
1/4 cup 15g / 0.5ozGreen peppercorns
  = (or 1/2 cup Roland Green Peppercorn
  Dijon mustard instead of previous two
  Ingredients)

Recipe Instructions

Brush tenderloin with oil. Spread Dijon mustard over entire surface of tenderloin. If using separate peppercorns and Dijon mustard, dredge tenderloin in peppercorns.

Place tenderloin in roasting pan. Roast in a preheated 375 degree oven for one hour. Let rest at least 10 minutes before slicing.
