Tamale Pie Casserole Recipe - Cooking Index
1/2 lb | 227g / 8oz | Ground pork sausage |
1 lb | 454g / 16oz | Lean ground beef |
1 | Garlic clove - minced | |
1 cup | 62g / 2.2oz | Chopped onion |
2 cups | 220g / 7.8oz | Sliced celery |
1 | Tomatoes - (28 oz) | |
2 cups | 125g / 4.4oz | Canned whole kernel corn |
Salt - to taste | ||
2 teaspoons | 10ml | Chili powder |
1/2 cup | 31g / 1.1oz | Cornmeal |
1 1/2 cups | 355ml | Pitted ripe olives |
1 1/2 cups | 219g / 7.7oz | Shredded Jack or American cheese |
Cook sausage until lightly browned, stirring to keep crumbly. Pour off excess fat, add beef and cook and stir until browned.
Stir in garlic, onion and celery and cook until vegetables are tender but not browned.
Stir in tomatoes, corn, salt and chili powder and simmer about 15 minutes. Slowly stir in cornmeal and cook until thickened. Stir in olives.
Turn into greased 2-quart casserole and top with cheese. Bake at 350 degrees 45 minutes.
This recipe yields 8 servings.
