French Toast Cubes Recipe - Cooking Index

Heat the oven to 375 degrees. Remove the outer crust from the French bread with a serrated knife. Cut the bread crosswise into 1-inch slices. Cut each slice into 6 cubes.
Combine the egg substitute, milk, vanilla and granulated sugar in a shallow glass baking dish. Place the bread cubes, a few at a time, into the egg batter and turn to coat all sides. Let the bread stand in the egg mixture about 10 minutes.
Spray a large nonstick skillet with cooking spray. Heat the skillet over medium-low heat until hot. Lift the bread cubes out of the egg mixture, letting the excess drip back into the dish. Working in batches, place the cubes in the skillet so they are not touching and cook, turning to brown all sides, about 5 minutes. Remove the cubes to a large shallow baking pan.
When all the bread has been browned, bake until the cubes are puffed and the center is cooked through, about 10 minutes.
Serve the bread cubes warm, sprinkled with powdered sugar and cinnamon to taste. Garnish with a few slices of banana or other fruits of your choice. You can also serve with your favorite jam, jelly or maple syrup.
