Party Eggs

Recipe Ingredients

5   Strips bacon
1/4 cup 49g / 1.7ozButter - (1/2 stick)
3   Tomatoes - seeded, chopped
6   Green onions - diced
  Salt - to taste
  Freshly-ground black pepper - to taste
12   Egg whites
2   Eggs
1/2 lb 227g / 8ozSharp Cheddar or Jack cheese - grated

Recipe Instructions

Cook the bacon in a skillet over medium-high heat until crispy, 5 to 7 minutes. Drain the bacon on paper towels, then crumble and set aside. Reserve the bacon grease for another recipe.

Melt the butter in a 12-inch skillet over medium heat. Add the tomatoes and green onions and cook until the onions have softened, about 5 minutes. Season with salt and pepper to taste.

Beat together the egg whites and eggs, then add them to the skillet. Reduce the heat and cook, stirring occasionally, until the eggs are scrambled, about 5 to 6 minutes. Top with the grated cheese.

Remove the skillet from the heat and cover until the cheese has melted. Top with the crumbled bacon before serving.

This recipe yields 4 to 6 servings.
