Derby Steaks Recipe - Cooking Index
Steaks similar to these used to be served at Churchill Downs, home of the derby. Serve with warmed rolls.

3 tablespoons | 45ml | Butter |

4 | New York Strip steaks, 1" thick - (8 oz ea) | |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Wash watercress and cut off stems. Place watercress on large platter. Set aside.
Melt 2 tablespoons butter in large, heavy skillet over medium-high heat. Add garlic. Sprinkle steaks with pepper and add to butter. Saute about 3 to 4 minutes per side for medium-rare, or more to your liking.
Remove steaks from heat and sprinkle with salt. Discard garlic. Serve atop platter of watercress.
This recipe yields 4 servings.
Each serving: 292 calories; 272 mg sodium; 127 mg cholesterol; 15 grams fat; 1 gram carbohydrates; 37 grams protein; 0.22 gram fiber.
