  Tomato-Eggplant Jam - (see recipe)
  Marinade
2 cups 474mlOlive oil
6   Rosemary sprigs
2 tablespoons 30mlChopped fresh thyme
8   Garlic cloves - coarsely chopped

Recipe Instructions

Marinate the lamb 4 hours or overnight. Preheat grill, cook lamb on rotisserie until of desired doneness.

Serve sliced with Minted Cucumber Chutney and Tomato-Eggplant Jam.
