Angel Hair Spelt Pasta With Black Truffles Recipe - Cooking Index
If you check out the Earthy Delight website, you'll see that they carry black truffles. If you haven't yet tried truffles, now's the time. They have a legendary woodsy flavor that imparts itself readily to whatever they're served with. The frozen black Oregon truffles are also available — less expensive and well worth the effort.

1/2 cup | 118ml | Truffle oil - plus |
2 tablespoons | 30ml | Truffle oil |
1/4 lb | 113g / 4oz | Grated Parmigiano-Reggiano cheese |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/4 cup | 59ml | Snipped fresh chives = (or finely-chopped green portion of scallions) |
1 | Black truffle - shaved |
Cook the angel hair pasta according to package directions.
When the pasta has been drained, place it in a mixing bowl; add 1/2 cup of truffle oil, 3/4 cup of the cheese, 1/2 teaspoon salt, black pepper, and chives. Toss to combine thoroughly.
Garnish with the shaved truffle and drizzle with the remaining two tablespoons of truffle oil. Sprinkle with the remaining cheese. Serve immediately.
