Baked Paddlefish, White River Recipe - Cooking Index
2 lbs | 908g / 32oz | Paddlefish steaks or fillets |
1 | Garlic clove - cut small | |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Freshly-ground black pepper |
4 tablespoons | 60ml | Butter or margarine |
4 slices | Raw bacon | |
1 can | Tomatoes - (15 oz) | |
1 | Onion - chopped (medium) | |
1 | Green pepper - chopped | |
1 | Bay leaf - crumbled | |
1/8 teaspoon | 0.6ml | Cayenne pepper |
Rub fish with cut garlic. Season with salt and pepper. Place in a buttered casserole dish, and lay bacon strips across top.
Mix remaining ingredients, and pour over and around fish. Bake at 400 degrees for 30 minutes or until fish flakes with a fork.
