Slow Cooked Swiss Moose

The moose is the most highly sought after big game animal in Alaska, and the hunting season opens in September for most of the state. One in four hunters will be successful in their hunt and bring home enough meat to feed a family of four for a year.

Recipe Ingredients

2 1/2 lbs 1135g / 40ozMoose round steak, 1 1/2" thk - (to 3)
2 tablespoons 30mlUnbleached flour
1/2 teaspoon 2.5mlMarjoram
1/2 teaspoon 2.5mlSage
2   Onions - sliced
1   Large can tomatoes
1   Mushrooms - (size optional)
1   Green pepper - sliced (large)
1   Celery stalk - sliced

Recipe Instructions

Mix flour, marjoram, sage, salt, pepper; spread half of the mixture on one side of steak; pound into steak. Repeat with other side.

Brown pounded meat in a tablespoon of vegetable oil in a large electric skillet. When brown, remove steak from pan.

Add onions, peppers, celery, and stir fry. Add tomatoes and mushrooms and simmer on low heat for 5 minutes.

Cut steak into 4 to 6 equal sized pieces. Pour liquid into slow cooker. Add steak. Cook on low for 3 hours or until tender. Serve with rice, mashed potatoes, or noodles.

This recipe yields 4 to 6 servings.
