Raccoon Sloppy Joe's Recipe - Cooking Index
1 | Young raccoon - (4 to 6 lbs) - cut in pieces | |
Water - as needed | ||
1 | Onion - choopped | |
1 cup | 110g / 3.9oz | Chopped celery |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 | Onions - chopped | |
1/2 | Green pepper - chopped | |
2 tablespoons | 30ml | Butter |
1 cup | 237ml | Barbecue sauce |
1 cup | 237ml | Chili sauce |
8 | Hamburger buns - toasted |
Cook raccoon in water, cover with first onion, celery and salt and pepper.
Simmer until meat is tender. Remove from bones and either cut into very small pieces or put through a grinder.
Saute two onions and green pepper in butter until tender but not brown.
Add barbecue and chili sauce and heat thoroughly.
Add raccoon, saturate with sauce and serve in toasted hamburger rolls.
This recipe yields 8 servings.
