Raccoon Sloppy Joe's

Recipe Ingredients

1   Young raccoon - (4 to 6 lbs) - cut in pieces
  Water - as needed
1   Onion - choopped
1 cup 110g / 3.9ozChopped celery
  Salt - to taste
  Freshly-ground black pepper - to taste
2   Onions - chopped
1/2   Green pepper - chopped
2 tablespoons 30mlButter
1 cup 237mlBarbecue sauce
1 cup 237mlChili sauce
8   Hamburger buns - toasted

Recipe Instructions

Cook raccoon in water, cover with first onion, celery and salt and pepper.

Simmer until meat is tender. Remove from bones and either cut into very small pieces or put through a grinder.

Saute two onions and green pepper in butter until tender but not brown.

Add barbecue and chili sauce and heat thoroughly.

Add raccoon, saturate with sauce and serve in toasted hamburger rolls.

This recipe yields 8 servings.
