Muskox Barley Soup Recipe - Cooking Index
2 lbs | 908g / 32oz | Muskox meat |
2 lbs | 908g / 32oz | Onions - chopped (large) |
2 | Celery stalks - chopped | |
1 | Garlic clove | |
1/4 cup | 59ml | Sherry |
Basil - to taste | ||
Rosemary - to taste | ||
Bay leaf - to taste | ||
3 | Peppercorns - (to 4) | |
2 | Potatoes - diced very small | |
1/2 cup | 118ml | Barley |
Cut meat into 1-inch cubes and brown with onions and a garlic clove in some butter or oil.
When meat is browned, fill pot with water and add seasonings. Simmer for an hour or until meat is tender. Add barley and simmer.
Just before barley is done, add potatoes and cook just until potatoes are done.
