| Mallard breasts | ||
| Sour cream - as needed | ||
| Fresh Mushroom Sauce | ||
| 1 lb | 454g / 16oz | Fresh mushrooms |
| 1/4 cup | 49g / 1.7oz | Butter |
| 2 tablespoons | 30ml | Flour |
| 1 cup | 237ml | Chicken broth |
Fresh Mushroom Sauce: Saute mushrooms in butter. Remove mushrooms; add flour and chicken broth. Stir constantly over heat, until thick. Add mushrooms.
Brown breasts and place in shallow pan. Cover with sour cream and fresh mushroom sauce. Bake slowly until tender.
