Grilled Tuna Burger

Recipe Ingredients

12 oz 340gFresh tuna - ground, chilled
4   Scallions - (to 6) - chopped
1 1/2 tablespoons 22mlChopped pickled ginger
2 1/2 tablespoons 37mlSoy sauce
  Freshly-ground black pepper - to taste
4   Brioche loaf - crust removed

Recipe Instructions

Put tuna in a chilled bowl. Add chopped scallion, pickled ginger, soy sauce and pepper. Mix all of the ingredients lightly. Depending on the size burger you want, divide the mixture into 2 or 4 patties and form your burgers.

Heat your grill or skillet over medium flame. Place brioche slices on grill and toast. Remove slices and place patties on grillpan sear to your desired doneness. Rare to well.

This recipe yields 2 to 4 burger patties.
