Bok Choy-Shiitake Stir-Fry

Recipe Ingredients

1/2 lb 227g / 8ozShiitake mushrooms - washed, sliced
2 tablespoons 30mlVegetable oil
3   Garlic cloves - minced
1 tablespoon 15mlGrated fresh ginger
1   Bok choy - chopped 1" pieces
1/4 cup 36g / 1.3ozChopped red bell peppers
1   Green onions, green and white parts - chopped
1 tablespoon 15mlDark sesame oil
2 tablespoons 30mlSweet sherry
2 tablespoons 30mlSoy sauce
  Salt - to taste
8 oz 227gOriental noodles - (to 12 oz) - cooked
2 tablespoons 30mlSesame seeds - for garnish

Recipe Instructions

In a large skillet, saute the mushrooms in the oil for 3 to 5 minutes. Add the garlic, ginger, bok choy, peppers, green onions, sesame oil, sherry, soy sauce, and salt. Stir-fry until the bok choy and peppers are tender, about 5 to 8 minutes. Add the noodles and mix.

Serve on a platter and sprinkle the top with the sesame seeds.

This recipe yields 4 servings.
