Yankee Pot Roast With Mustard Grain

Recipe Ingredients

3 lbs 1362g / 48ozLean chuck roast
1/2 cup 118mlBeef stock
6   Bay leaves
2   Fresh thyme
1/2 cup 55g / 1.9ozCarrot, in 1/2" dice
1/2 cup 31g / 1.1ozOnion, in 1/2" dice
1/2 cup 118mlLeeks, in 2" lengths
1/2 cup 55g / 1.9ozCelery, in 1" lengths
1/2 cup 118mlPotato, in 1/2" dice
  Salt - to taste
  Freshly-ground black pepper - to taste
  Whole-grain mustard

Recipe Instructions

In a heavy cast-iron pot, sear the roast on all sides over high heat. Then add stock and herbs and simmer tightly covered for 30 minutes. Add vegetables and simmer tightly covered another 30 minutes. Add salt and pepper to taste and serve in a large pasta bowl with mustard on the side.

This recipe yields 8 servings.
